Paneer Jalfrezi

I am not a very big fan of Paneer, but this is one of the few panner recipes that I enjoy.

What you would need -

Panner - 250 gms cut in 2 inch long pieces
Tomatoes - 1/2 seeded and cut into 2" long slices
Capsicum/Pepper - 2 small preferrably different colored. Cut into 2" long slices.
Onions - 1 large (Sliced lengthwise)
Ginger - 2" piece cut into thin strips
Green chillies - 2 finely chopped
Cumin seeds - 1tsp
Dried red chillies - 2 cut into half
Red chilly powder - 1/2 tsp
Turmeric -1/4 tsp
Garam masala - 1 tspn
Coriander leaves - 5 -6 sprigs
Salt to taste
Oil - 3tblspn

Procedure -

Heat little oil in a pan and fry panner till they are slightly brown in color. This prevents the paneer from breaking. Remove and keep it aside.

Add some more oil  in the pan and add cumin seeds. When they change color, add red chillies and suate for few secs. Next, add ginger, green chillies and onions. Saute for a minute or so till the onions are translucent.

Add red chilly and turmeric powder and stir well. Add capsicum and cook for another 2-3 minutes. Now, add the fried paneer pieces, salt and garam masala. Mix well and let it cook for 2 mins. Finally, stir in tomato pieces.

Serve hot garnished with coriander leaves.
