Cauliflower in Yogurt Sauce




























Spice level - 3
Serves - 4

What you need -

Cauliflower - 1 medium, cut into small florets
Onion - 1 medium, cut into 1/2 inch dice
Green Pepper - 1 medium, finely chopped (optional)
Ginger - 1tbspn, peeled and minced
Garlic cloves - 1tspn, peeld and minced
Green chillies - 2, finely chopped
Tomatoes - 1/2
Cumin seeds - 1tsp
Cumin Powder - 1tsp
Garam Masala - 1tsp
Red Chilli Powder - 1/2tsp
Yougurt - 1/2 cup
Fresh Cilantro - 5-6 sprigs
Oil - 2/3 cup
Salt to taste

Procedure -

Heat oil in a large kadai over medium - high heat. Add the cauliflower and cook, stirring every few secs till they turn light brown. Remove and drain on paper towels.

Add cumin seeds to the left over oil in the pan. Add onions and salt and cook till the onions turn brown around the edges, about 5 mins. Next, add the minced ginger, garlic and green chillies and stir fry till the raw smell of garlic goes away.

Now, add cumin powder, garam masala, red chilli powder and yogurt and cook for 2 mins. Add the bell peppers, tomato and cooked cauliflower, mix well and cook for 5 more mins. Check salt.

Garnish with cilantro and server hot with roti/chappati.
