Avocado Tomato Melt Sandwich

Today we decided to have sandwiches for dinner. My hubby loves them a lot along with burgers and pizzas and can have them any time of the day...

As I was scanning the fridge for all the ingredients that we would require, I saw one lonely little Avocado lying in the deep corner of the fridge. It had been lying there for almost 2 weeks now. Being absolutely sure of the fact that if it stays in the fridge for few more days, it will have to go straight to the trash bin, we decided to utilize it in our sandwiches and immediately started googling for avocado sandwich recipes. After scanning quite a few of them, I finally came across Avocado Tomato Melt Sandhwich recipe and decided to try it, firstly because it was very simple to make and secondly because of the pictures of those sandwiches ..they looked so yummy and tempting.

The original recipe had English muffins but since we didn't had any, we have made ours with bread slices.




















What you need -

Bread slice - 6-7 (The original recipe had 4 English muffin, split)
Ripe Avocado - 1 (peeled, pitted and sliced)
Tomatoes - 1 or 2
Basil leaves - 1/4 cup
Parmesan Cheese - 1/4 cup grated
Mozzarella Cheese - sliced/grated
Fresh ground black pepper
Salt to taste

Procedure -

Preheat the oven broiler to high. In the broiler, toast the bread slices/English muffin halves on a baking sheet until golden brown. Remove from oven.

Now, place the sliced avocados and tomatoes on top of each slice. Sprinkle some salt and chopped basil leaves over the tomatoes.

Next, add a layer of Mozzarella cheese. Finally add some grated Parmesan cheese and top it with black pepper.

Now broil the slices for approx 2 - 3 minutes or till the cheese has melted. Remove from oven and enjoy while it is hot with spicy tomato sauce
